A Mokk-a Kind of Christmas

A real Dutch Santa!

Twas the night before Christmas and all through the house

The presents are ready, the tree is ablaze

Now what to do for Santa as he sails through the maze?

Cafe Au Lait Pudding

Here is another nice one for the holidays!!  Makes enough for 2-3 people.

  • 1 package of Jell-O® brand vanilla instant pudding (2.5 oz.)
  • 1 package of Jell-O® brand chocolate instant pudding (2.5 oz.)
  • 3 ½ cups of milk.
  • 1 cup of drip coffee, chilled. Try Mokk-a’s Cafe Italia for this one!! 
  • Whipped cream in a can for garnish.
  • Three bowls, and serving dishes for the pudding
  • Directions:

    Follow the directions on the package for preparing the vanilla pudding: add 2 cups of cold milk and pudding mix in a bowl and whisk for two minutes.

    In a separate bowl, prepare the chocolate pudding. The directions call for 2 cups of milk. Instead, put in 1½ cups of milk and ½ cup of chilled coffee and pudding mix in a bowl and whisk for two minutes.

    Transfer about 4 tablespoons of the vanilla and 4 tablespoons of the chocolate pudding to a third bowl. Add 2 more tablespoons of coffee to this batch. Whisk this batch. It should appear a few shades lighter than the chocolate pudding’s color. Drink the remainder of the coffee!

    Presentation:

    Layer in cups or parfait glasses. Refrigerate for five minutes. Garnish with whipped cream before serving.

    Here is “A gingersnap-like cookie with real coffee flavor.”

    Ingredients

    • 1/3 cup shortening
    • 1/2 cup packed brown sugar
    • 1/2 cup white sugar
    • 1 egg
    • 1 1/2 teaspoons vanilla extract
    • 1 tablespoon milk
    • 2 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon baking powder
    • 2 tablespoons instant coffee powder

    Directions

    1. Preheat oven to 400 degrees F (205 degrees C). Line baking sheets with parchment paper.
    2. Beat the shortening, brown sugar, white sugar, egg, vanilla and milk until fluffy.
    3. Stir the flour, salt, baking soda, baking powder and instant coffee. Add to sugar mixture and mix thoroughly.
    4. Shape dough in 1 inch balls. If it’s too soft, chill it for a while. Place balls 2 inches apart on prepared baking sheets. Flatten to 1/8 inch thickness with fork or glass dipped in sugar.

    Makes about 24 cookies!  Enjoy!!

    1. Bake at 400 degrees F (205 degrees CV) for 8 to 10 minutes until lightly browned.

    Cappuccino Cake

    Now here is that is a must try!

    1 premade sponge cake.
    1 cup of boiling coffee.
    1 cup of condensed milk.
    2 teaspoons of gelatin.
    Cream, for topping.
    Powdered chocolate, for topping.

    Line a suitably sized starsol cake tin with foil and place the premade sponge cake inside.

    Dissolve the gelatin in the boiling coffee.

    Mix the coffee into the condensed milk.

    Pour the mixture over the sponge cake, distributing so that mixture is evenly absorbed.

    Place in your refrigerator for 3-4 hours or until set.

    Top with cream and powdered chocolate.

    Creamy Irish Coffee

    This one is a real treat!!

    4 cups of fresh coffee.
    1 cup of whipping cream.
    ½ cup of Irish whiskey.
    ¼ cup of sugar.
    2 tablespoons of Sugar.
    2 tablespoons of Irish whiskey.

    In a saucepan, add 4 cups of strong fresh coffee, ½ cup of Irish whiskey and ¼ cup sugar. Heat up, but do not boil.

    Whip 1 cup of whipping cream until it is light, then beat in 2 tablespoons of sugar and 2 tablespoons of whiskey.

    Pour the coffee into coffee mugs and spoon the cream on top.

    Serve.

    Ok, now try this with Mokk-a’s Cafe Italia!  Dreamy!

    Coffee Punch recipe

    Hey guys!  This could be a great addition to your Thanksgiving or Christmas celebration!

    Coffee Punch ingredients list:

    2 quarts of vanilla ice cream, softened.
    2 quarts of strong brewed coffee, cooled.
    2 cups of milk.
    2 cups of whipping cream, whipped.
    ½ cup of sugar.
    1 tablespoon of vanilla extract.
    Ground nutmeg.

    Instructions for Coffee Punch:

    Combine the coffee, milk, sugar, and vanilla; stir thoroughly. Chill.

    Place the vanilla ice cream in a large punch bowl.

    Pour the coffee mixture over top of the ice cream, stirring gently.

    Top with whipped cream, sprinkle with nutmeg, then serve.

    Try this with Mokk-a’s Cafe France!  Absolutely delightful!!

    Apricot Iced Coffee ingredients list:

    ¾ cup of coffee chilled.
    ½ cup of chilled apricot juice.
    1/3 cups of cold milk.
    ½ pt softened vanilla ice cream.
    ½ cup of fresh apricots.

    Instructions for Apricot Iced Coffee:

    1. Mix the coffee, milk and apricot nectar together in a bowl.
    2. Add the softened ice cream and beat until smooth.
    3. Blend fresh apricots in a blender until smooth. Pour the apricot mixture into a coffee glass and top with the coffee mixture.
